PREPARATION.

The process of any EXTRA VIRGIN olive oil has three key points for this category :

1º PICK FRUIT IN GOOD CONDITION , while it is still fresh.

2º SHORT TIME BETWEEN COLLECTION AND MILLING , is usually done on the same day of collection.

3º COLD MILLING.

The aroma is fruity, green vegetables and with a prolonged sweet and nutty aftertaste.
