In recent years, many medical researchers have focused their attention on the virtues of the Mediterranean diet in general and extra virgin olive oil in particular. On closer examination, this ancient liquid has proven to be more than a source of monounsaturated fat. It is also a rich source of antioxidants and therefore helps prevent damage caused by molecules known under the name of "free radicals" in the body tissues. Free radicals have been linked to heart disease, cancer and aging. Furthermore, the beneficial effect of oleic acid helps to reduce the coagulation of blood in the arteries.

Olive oil also plays an important role in diabetes. Research has shown that people enjoy in their diet olive oil have better control over their diabetes and lower levels of some fats in the blood, when compared with high-carbohydrate diet normally recommended for this type of diabetes.

Observed protective effect is also produced by the oil on the metabolism, arteries, stomach and bile. Promotes growth during childhood and extends life expectancy in the elderly. Has a unique effect on serum lipids. Moreover, olive oil appears to have a cholagogic (expulsion of bile) and a therapeutic effect on peptic ulcers.
